Diabetic Fruit Cookies

A moist and chewy cookie for Diabetics

Yield: 3 dozen cookies

Ingredients

  • 1 c. flour
  • 1 tsp. baking soda
  • 1 c. water
  • 1 c. dates, chopped
  • 1/2 c. apples, peeled & chopped
  • 3/4 c. raisins
  • 1/2 c. margarine
  • 1 c. quick oats
  • 2 eggs, beaten (or eggbeaters)
  • 1 tsp. vanilla
  • 1 c. pecans, chopped

Instructions

  1. Sift flour and soda, set aside
  2. Cook water, dates, apple and raisins;bring to a boil. Simmer 3 minutes
  3. Remove from heat and add the margarine and stir
  4. Cool mixture and then add eggs, oatmeal and the dry ingredients; add the vanilla and nuts
  5. Cover and refrigerate overnight
  6. Drop on cookie sheets 2 inches apart. Bake in 350 degree oven for about 24 minutes
  7. Store in the refrigerator in airtight container
  8. May also add 1 tsp. cinnamon to dry ingredients if desired.

I've been making this recipe for YEARS but tend to misplace it. I'm so happy I found it. This is great for everyone not just diabetics. I also make it with Rice Flour for my Gluten Free son.
