Crunchy Oven Fried Fish

The crunchy coated fish you love, without the greasy fat.

Crunchy Oven Fried Fish Photo
Yield: Serves 4

Ingredients

  • 1 lb. cod fillets
  • 1/4 cup all-purpose flour
  • 1/4 tsp. salt
  • 1/4 tsp. lemon pepper
  • 1 egg white
  • 1/4 cup dry bread crumbs
  • 1/4 cup cornmeal
  • 1 1/2 tsp. lemon peel, grated
  • 1/2 tsp. basil
  • Cooking spray

Instructions

  1. Cut fish into serving-size pieces
  2. In a shallow dish, combine flour, salt and lemon pepper and set aside
  3. Beat egg white until frothy and set aside
  4. Combine bread crumbs, cornmeal, lemon peel and basil
  5. Dip one side only of fish fillets into flour mixture, shaking off excess
  6. Dip into egg white, then coat with bread crumbs
  7. Spray a shallow baking pan with nonstick cooking spray
  8. Place fillets in baking pan coating side up, tucking under any thin edges
  9. Bake at 450 degrees F for 6 to 12 minutes or until fish flakes easily with a fork

This looks great! I can't wait to try it out. I love fried fish, if this tastes anywhere nearly as good I will be in heaven.
