Banana and Oat Muffins

This hearty breakfast recipe is a favorite at the Biggest Loser Resort.

Per Serving: 227 calories, 2 gram fat, 6 grams protein, 44 grams carbohydrates, 5 grams dietary fiber

Yield: Serves 6

Ingredients

  • 1 large egg
  • ¾ cup apple juice
  • 1 cup raisins
  • 1 cup chopped banana
  • ½ cup applesauce
  • 1 cup whole wheat flour
  • 1 cup quick oats
  • 1/3 cup fructose
  • 1 tablespoon baking powder
  • 1 teaspoon salt
  • 2 teaspoons cinnamon

Instructions

  1. Preheat oven to 400 degrees F.
  2. Mix dry and wet ingredients separately. Combine wet and dry ingredients and mix until incorporated.
  3. Lightly spray muffin tins with Pam ® non-stick cooking spray. Fill muffin tins 2/3 of the way full.
  4. Bake for 15-20 minutes. Let cool and serve.

I absolutely love this recipe. So filling. However, since I do not like raisins, I substitute with dried cherries.
