Baked Chicken And Prosciutto

A tasty variation on chicken cordon bleu.

Baked Chicken And Prosciutto Photo
Yield: Serves 4

Ingredients

  • 4 skinless boneless chicken breasts
  • 1/4 cup low-calorie Italian salad dressing
  • 2 slices prosciutto, halved

Instructions

  1. Marinate chicken breasts in Italian dressing overnight (covered and chill)
  2. Preheat oven to 400 degrees F
  3. Coat baking dish with nonstick spray
  4. Arrange breasts in single layer
  5. Cover each chicken breast with a piece of prosciutto, tucking ends under chicken
  6. Bake for 15 to 20 minutes, until juices run clear

Chavone - Skip the bread and go with a brown rice instead. For sides, a green salad can always be served, also try a baked sweet potato (with enough natural flavor and moisture to not need any oils/fats added), and go for another green like steamed broccoli or fresh green beans! Enjoy!
