Atkins Blue Cheese Dressing

Another delicious Blue Cheese salad dressing recipe.

Per serving: 118 calories, 10 g fat, 4 g protein, 4.5 g carbohydrates, 24.5 mg cholesterol, 229 mg sodium

Yield: Serves 6

Ingredients

  • 4 oz. blue cheese, such as Roquefort (about ¾ cup)
  • ½ cup reduced fat sour cream
  • ½ cup low calorie mayonnaise
  • 2 Tbsp water
  • 2 tsp cider vinegar
  • ¼ tsp. pepper
  • 1 dash hot pepper sauce
  • ¼ cup chives, minced

Instructions

  1. In a small bowl, break up the cheese with a fork and mash it lightly, leaving some small chunks
  2. Add everything else but the chives and mix together thoroughly
  3. Stir in the chives
  4. Cover the bowl tightly and store in the refrigerator up to a week

No way would Dr. Atkins approve of this!!! Reduced fat sour cream?? Low calorie mayonaise??? No way! Not from Dr. Atkins!!! 4.5 carbs per serving is extremely high for a dressing! This is either not a true Atkins recipe, or Atkins has sold out to the diet dictators!!!
