On the 17 Day Diet, can egg beaters be used instead of egg whites scrambled for breakfast?

I am referring to the 17 day diet.
Do I have to eat cucumbers in salads?
Thank you.
My Dr. recommended the diet for me, but I am starting it after Thanksgiving. Reading the book now.
