When fall comes around we start craving all-things pumpkin, and we don't limit the flavor to our pies. We absolutely love this recipe for Pumpkin Pancakes because it's simple, healthy, delicious and screams fall.

When it comes to making your pancakes seasonally-appropriate, think beyond just fall. When it's Valentine's Day, add pink strawberries to your batter. When it's St. Patrick's Day, add a few sprigs of mint, peppermint extract or green food coloring. When it's Christmas, try a ginger or peppermint flavor. Whatever the occasion, there's always a way to make it seasonal, fun and healthy.
