Zucchini Casserole

A casserole that includes all your dinner elements in one dish.

Yield: Serves 4


  • 1/2 cup diced tomatoes
  • 12 slices bacon, cooked and crumbled
  • 1/4 cup Parmesan cheese
  • salt and pepper to taste
  • 2 lbs. chicken, cooked, cut into pieces
  • 1 cup zucchini, chopped


  1. Preheat oven to 425º F
  2. Mix tomatoes, bacon, Parmesan, salt and pepper
  3. Layer tomato mixture with chicken in oiled casserole dish
  4. Bake for 30 minutes
  5. Add chopped zucchini to dish and cover with shredded cheese
  6. Bake 30 minutes longer until zucchini is tender crisp
