Zucchini Casserole
A casserole that includes all your dinner elements in one dish.
Yield: Serves 4
Ingredients
- 1/2 cup diced tomatoes
- 12 slices bacon, cooked and crumbled
- 1/4 cup Parmesan cheese
- salt and pepper to taste
- 2 lbs. chicken, cooked, cut into pieces
- 1 cup zucchini, chopped
Instructions
- Preheat oven to 425º F
- Mix tomatoes, bacon, Parmesan, salt and pepper
- Layer tomato mixture with chicken in oiled casserole dish
- Bake for 30 minutes
- Add chopped zucchini to dish and cover with shredded cheese
- Bake 30 minutes longer until zucchini is tender crisp
