Winter Granola

Perfect for a cold day snack, or it makes a delicious gift.

Ingredients

A great holiday or hostess gift. Package it in cellophane bags or mason jars tied with a festive bow.

This recipe makes a large quantity, but feel free to halve the recipe and bake on one baking pan. - Terry

  • 1 cup packed light brown sugar
    • 1/2 cup canola oil
    • 1 1/2 tsp vanilla extract
    • 1 1/2 tsp almond extract
    • 1 1/2 tsp kosher salt
    • 1 1/2 tsp cinnamon
    • 8 cups old-fashioned oats
    • 3/4 cup almonds, very coarsely chopped
    • 3/4 cup pistachios, very coarsely chopped
    • 3/4 cup Cherry- juice infused Craisins

Instructions

  1. Heat oven to 350 degrees F. Line 2 rimmed baking sheets with nonstick foil or regular foil coated with nonstick spray.

  2. In a large bowl, whisk brown sugar, oil, extracts, salt and cinnamon. Add oats and using hands work mixture so that oats are evenly coated.

  3. Add almonds and pistachios and toss until well mixed.

  4. Divide mixture between the prepared pans and spread into an even layer.

  5. Bake on middle rack of oven, tossing twice, until lightly toasted, 20 to 25 minutes. (Watch carefully towards end of cooking time to avoid burning).

  6. Let cool completely. Stir in Craisins.

Homemade Winter Granola Bars

Use this to make granola bars by whisking 1 large egg, 1/3 cup honey, and 1/3 cup canola oil in a large bowl. Add 3 ½ cups Winter Granola and mix until well blended. Pack into a greased aluminum foil-lined 9 x 9-inch baking pan. Using a spatula, press down into an even layer. Bake at 325 degrees F for 30 minutes or until firm. Cool, then cut into 14 bars.
