Weight Watchers Shrimp Fandango

Shrimp with a light and wonderful flavor to keep you going.


Yield: Serves 2

Ingredients

  • 1 Tbs. olive oil
  • 1/4 cup yellow bell pepper, largely diced
  • 1/4 cup red bell pepper, largely diced
  • 1 clove garlic, minced
  • 10 oz. large shrimp, shelled and deveined
  • 1/4 cup dry vermouth
  • 1/2 cup Chinese snow peas, steamed until tender crisp
  • 1/2 cup julienne cut carrots, steamed until tender crisp
  • 1/2 cup scallions, sliced
  • Dash of salt
  • Dash of hot sauce

Instructions

  1. In a 10-inch skillet heat oil over medium heat
  2. Add garlic and peppers and saute until peppers are tender, about 2 minutes
  3. Increase heat to high
  4. Add shrimp and cook, stirring constantly, until shrimp begin to turn pink, about 2 minutes
  5. Add vermouth; continue to stir and cook until liquid is reduced, about 2 minutes
  6. Add remaining ingredients
  7. Cook, stirring constantly, until heated through
  8. May be served over hot rice or rice noodles if desired

I used to make this several years ago while on the WW program. I lost the recipe...now I have found it again. It is GREAT. It doesn't taste like diet food! posted Jul 30th, 2009 10:42 am
