Weight Watchers Chicken with Feta Sauce

Sauteed chicken with a creamy feta cheese sauce.

WW point per serving = 7

Yield: Serves 4

Ingredients

  • 4- 4 oz. skinless, boneless chicken breasts
  • 2 Tbs. balsamic vinegar
  • 1/2 tsp. ground thyme
  • 2 tsp. olive oil
  • 1 Tbs. plus 1/2 teaspoon all-purpose flour
  • 1/2 tsp. oregano
  • 1 cup fat-free milk
  • 1 cup frozen broccoli, carrots, and cauliflower medley, thawed
  • 1/3 cup feta cheese
  • 1 tsp. fresh lemon juice
  • 2 cups hot cooked rice

Instructions

  1. On a sheet of wax paper, sprinkle the chicken with the vinegar and thyme
  2. In a large nonstick skillet, heat the oil
  3. Cook the chicken until browned and cooked through, 4-5 minutes on each side
  4. Transfer to a plate
  5. Sprinkle the flour and oregano over the pan juices
  6. Cook, stirring constantly, 1 minute
  7. Gradually whisk in the milk
  8. Cook, whisking constantly, until thick and bubbling, 2-3 minutes
  9. Stir in the vegetables, cheese and lemon juice
  10. Reduce the heat and simmer until the cheese melts, about 2 minutes
  11. Place the rice on a large platter, then top with the chicken
  12. Spoon the sauce over the chicken and serve

I've made this several times and LOVE LOVE LOVE it. Non-WW people like it, too, although they tend to use more orzo per serving than the 1/2 cup you use to keep this at 7 points. I also have used fat free feta with great success.

I'm not a big cook and am not very good at making the sauce from scratch, but it still tastes OK in the end. It also tends to work better with fresh chicken, but frozen works, too. posted Apr 10th, 2009 6:30 pm
