Weight Watchers Chicken Stroganoff

Enjoy a hearty meal with only 2.5 WW points.

WW points per serving = 2.5

Yield: Serves 4

Ingredients

  • 1 Tbs., plus 1 tsp. vegetable oil, divided
  • 10 oz. boneless, skinless chicken breast, cut into 1/2-inch strips
  • 2 cups sliced mushrooms
  • 1 cup sliced onion
  • 1 cup low-sodium chicken broth
  • 2 tsp. all-purpose flour
  • 3 Tbs. fat-free sour cream
  • 1 tsp. red wine vinegar
  • 1 tsp. Dijon-style mustard
  • 1/4 tsp. pepper

Instructions

  1. In medium skillet, heat 2 tsp. oil
  2. Add chicken
  3. Cover over medium-high heat, stirring frequently, until golden brown
  4. Remove chicken from skillet; set aside
  5. In same skillet, heat remaining 2 tsp. oil, then add mushrooms and onion
  6. Cook stirring frequently until all liquid has evaporated and onions are golden brown
  7. In small bowl, with wire whisk, combine broth and flour, blending until flour is dissolved
  8. Strain and add to skillet
  9. Stirring constantly, bring liquid to a boil over high heat, then reduce heat to low
  10. Simmer 10 minutes, stirring frequently
  11. Stir reserved chicken into broth mixture, simmer 5 minutes
  12. Remove skillet from heat
  13. Stir in sour cream, red wine vinegar, mustard and pepper
