Weight Watchers Chicken Paprikash

Sounds fancy but it's easy to prepare.

Nutrition Facts: WW points per serving = 4; Calories 152; Fat 6g; Fiber 0g; Cholesterol 50mg; Sodium 208mg

Yield: Serves 8

Ingredients

  • 2 tsp. corn oil
  • 3 pounds chicken, skinned, cut into 8 pieces
  • 1 cup sliced onions
  • 2 Tbs. paprika
  • 2 cloves garlic, minced
  • 1/2 tsp. dried thyme leaves
  • 1/2 tsp. salt
  • 1/4 tsp. black pepper
  • 1/2 cup low-sodium chicken broth
  • 1/4 cup dry white wine
  • 2 Tbs. white wine vinegar
  • 1 Tbs. tomato puree
  • 2 tsp. all-purpose flour
  • 1/2 cup non-fat sour cream

Instructions

  1. In large skillet, heat oil
  2. Add chicken and cook over medium-high heat 2 minutes on each side, until golden brown
  3. Remove chicken from skillet; set aside
  4. To same skillet, add onions and cook, stirring frequently, 4-5 minutes, until onions are lightly browned
  5. Reduce heat to low, then add paprika and garlic
  6. Cook, stirring constantly, 3 minutes
  7. Stir in thyme, salt and pepper
  8. In small bowl, with wire whisk, combine broth, wine, vinegar, tomato puree and flour, blending until flour is dissolved
  9. Strain and add to onion mixture
  10. Continue to stir with whisk, bring liquid to a boil over high heat
  11. Add reserved chicken
  12. Reduce heat to low, then simmer 20 minutes, basting chicken occasionally with pan juices, until chicken is cooked through and juices run clear when pierced with a fork
  13. Transfer chicken to serving platter
  14. With wire whisk, blend sour cream into pan juices and pour over chicken
