Weight Watchers Chicken Noodle Casserole

A home-cooked classic that warms up a winter day.

Nutrition Facts: WW points per serving = 4.5; Calories 238; Fat 6g; Protein 13g; Carbohydrate 34g; Cholesterol 44mg; Sodium 880mg Exchanges: 1 1/2 Grain (Starch); 1 Lean Meat

Yield: Serves 8

Ingredients

  • 4 cups egg noodles, cooked and drained
  • 2 cans condensed reduced-fat cream of mushroom soup
  • 1/4 cup skim milk
  • 6 oz. cooked chicken breast halves, chopped
  • 1 can tomatoes with green chiles (i.e. Rotel brand)
  • 10 oz. frozen mixed vegetables

Instructions

  1. Preheat oven to 350 degrees F
  2. Combine all ingredients in a large bowl and mix well
  3. Place in a 9 x 13-inch baking dish
  4. Bake for 30 minutes

This was actually pretty good. I added scalions and baby portobella mushrooms, also I used one can of 98% ff chicken soup and 1 can of 98% ff mushroom soup instead of the two cans of mushroom soup, and 1 cup of ff cheddar cheese. I topped off the casserole with crushed ff Lays potato chips. My husband loved it also! posted Sep 11th, 2009 9:35 pm
