Weight Watchers Chicken Noodle Casserole
A home-cooked classic that warms up a winter day.
Yield: Serves 8
Ingredients
- 4 cups egg noodles, cooked and drained
- 2 cans condensed reduced-fat cream of mushroom soup
- 1/4 cup skim milk
- 6 oz. cooked chicken breast halves, chopped
- 1 can tomatoes with green chiles (i.e. Rotel brand)
- 10 oz. frozen mixed vegetables
Instructions
- Preheat oven to 350 degrees F
- Combine all ingredients in a large bowl and mix well
- Place in a 9 x 13-inch baking dish
- Bake for 30 minutes

I added scalions and baby portobella mushrooms, also I used one can of 98% ff chicken soup and 1 can of 98% ff mushroom soup instead of the two cans of mushroom soup, and 1 cup of ff cheddar cheese. I topped off the casserole with crushed ff Lays potato chips. My husband loved it also!
