Weight Watchers Chicken in Red Wine Vinegar

Chicken breasts sauteed with fresh garlic, thyme and sweet red wine vinegar.

Yield: Serves 6

Ingredients

  • 2 Tbs. butter or margarine
  • 2 cloves garlic, crushed
  • 3 shallots, chopped
  • 6 boneless, skinless chicken breast halves (about 2 1/4 pounds)
  • 1/2 cup red wine vinegar
  • 2 cups finely chopped tomato (about 2 medium tomatoes)
  • 2 tsp. fresh thyme, chopped
  • 1/8 tsp. salt
  • 1/4 tsp. pepper
  • Cooking spray

Instructions

  1. Spray cooking spray in 10-inch skillet
  2. Add garlic, shallots and chicken
  3. Cook over medium-high heat 12 to 15 minutes, turning after 6 minutes, until chicken is no longer pink
  4. Reduce heat to low
  5. Add vinegar, then cover and cook 5 minutes
  6. Stir in remaining ingredients
  7. Turn chicken
  8. Cook over low heat 10 to 12 minutes until chicken is done
