Weight Watchers Chicken in Mustard Sauce

A delicious chicken meal for four, with low diet points.

Nutrition Facts: WW points per serving = 3; Calories 163; Fat 2g; Protein 28g; Carbohydrate 5g; Cholesterol 68mg; Sodium 356mg

Yield: Serves 4

Ingredients

  • 1/2 tsp. paprika
  • 1/4 tsp. salt
  • 1/4 tsp. coarsely ground pepper
  • 4- 4oz. skinned, boned chicken breast halves
  • Cooking spray
  • 1/4 cup dry white wine or low-sodium chicken broth
  • 1 1/2 Tbs. all-purpose flour
  • 3/4 cup 1% low fat milk, divided
  • 1 Tbs. peppercorn mustard or regular prepared mustard

Instructions

  1. Combine first three ingredients and sprinkle over chicken
  2. Coat a nonstick skillet with cooking spray
  3. Place over medium-high heat until hot
  4. Add chicken, then cook 3 to 5 minutes on each side, or until browned
  5. Remove chicken from skillet and set aside
  6. Add wine or broth to skillet
  7. Deglaze by scraping particles that cling to bottom
  8. Combine flour and 1/4 cup milk, stirring until smooth, then add to skillet
  9. Stir in remaining 1/2 cup milk and mustard
  10. Cook over medium heat, stirring constantly, until thickened
  11. Return chicken to skillet
  12. Bring to boil, cover, reduce heat and simmer 5 minutes or until chicken is done
  13. Serve chicken with sauce
