Waldorf Chicken Salad

Yield: Serves 4


  • 2 Tbs. plus 2 tsp. honey
  • 1 Tbs. plus 1 tsp. Dijon mustard
  • 2 tsp. poppy seeds
  • 3 1/2 Tbs. lemon juice
  • 8 dried apricots
  • 9 ounces skinless, boneless chicken breast, diced
  • 1 1/2 apples, diced
  • 2 cup red seedless grapes, halved
  • 2/3 cup celery, diced
  • 3 1/2 Tbs. walnuts, sliced
  • 2 Tbs. green onion, sliced


  1. In a large bowl, mix honey, mustard, poppy seeds, and lemon juice well
  2. Using kitchen shears or a sharp knife, julienne the apricots
  3. Add them to the dressing and allow to stand for about 30 minutes
  4. Add remaining ingredients and stir lightly
  5. Be sure to coat all apple with dressing to prevent discoloration
  6. Chill well before serving

This actually made for a very quick and easy dinner. I added raspberries and tossed with fresh greens to make it even more nutritious and filling.
