Turkey Burger Pie

Yield: Serves 4 - 1/4 pie per serving.

This quick pie is a great way to sneak in some more veggies. We like to garnish the tip of it with lettuce and tomato and zig-zag a little ketchup over the top.

1 medium onion, diced
3 carrots, peeled and grated
1 zucchini, grated
8 ounces ground skinless turkey breast
1/2 tsp each: black pepper, garlic powder, thyme
1 cup skim milk
1/2 cup all-purpose flour
1 teaspoon baking powder
1/2 cup grated nonfat mozzarella cheese

Heat large nonstick skillet over medium-high heat. Lightly spray with vegetable oil cooking spray.

Saute onion, carrots and zucchini until tender. Add ground turkey and break into little pieces. Cook until turkey is done (about 5 minutes or until no longer pink).

Remove from stove and add seasonings. Preheat oven to 375º.

Lightly spray 9 inch pie pan with vegetable oil cooking spray. Combine turkey mixture with milk, flour and baking powder. Mix well and pour into pie pan.

Place into oven for 25 minutes. Remove from oven, sprinkle mozzarella cheese over the top of pie and place back in oven for 5-10 minutes or until cheese melts.

Serving suggestion: place shredded lettuce and diced tomato over top of the corner of pie slice. Decorate with zig zags of ketchup over the top.
