Yield: Serves 4 - 2 cups per serving

A creamy rice dish that�s sure to please.

1 cup medium-grain rice
1-14-1/2 ounce can peeled, diced tomatoes with Italian herbs and garlic
3 tablespoons tomato paste
5 slices lowfat ham
1-1/2 cups frozen peas
3-1/2 cups water
2 tablespoons parmesan cheese

Combine all ingredients together except parmesan cheese in shallow microwaveable container.

Cover and microwave on high for 35-45 minutes or until rice is tender. Stir occasionally. When done, stir well and allow to sit for 3 minutes. Serve each portion with 1/2 tablespoon parmesan cheese.

Serving suggestion: tossed green salad.
