Thai Chicken Stir Fry
Stir fry with a Thai zing.
Yield: Serves 4
Ingredients
- 1/2 lemon rind, sliced
- 2 tsp. ground ginger
- 1 garlic clove, chopped
- 4 boneless chicken breasts, cut into bite-sized pieces
- 1/2 red bell pepper, seeded and sliced
- 1 medium carrot, cut into match sticks
- 2 Tbs. oyster sauce
- Salt and pepper
- 4 Tbs. fresh cilantro
- Cooking spray
Instructions
- Spray skillet with cooking spray
- Stir fry lemon rind with garlic and ginger until brown
- Add chicken and stir fry for a few minutes
- Add vegetables and stir-fry until chicken is cooked and vegetables are almost cooked
- Stir in oyster sauce and season to taste
- Stir-fry one more minute
- Garnish with cilantro
