Sweet Potato Pie
A Thanksgiving favorite you can feel good about eating.
Yield: Serves 6
Ingredients
- 1 1/2 pounds sweet potatoes
- 1 1/2 tablespoons olive oil
- 2 tsp. cinnamon
- 1/8 tsp. Mace
- 1/8 tsp. Cardamon
- 1/8 tsp. Nutmeg
- 2 tsp. Sugar Substitute
Instructions
Lightly coat a 15 x 10-inch baking sheet with olive oil spray.
Position a rack in lower third of oven. Preheat oven to 425 degrees Fahrenheit.
Scrub sweet potatoes well. Rinse and dry completely. Cut sweet potatoes into 3/4-inch dice. Transfer sweet potatoes to prepared baking sheet.
Drizzle olive oil over sweet potatoes. Sprinkle with spices and sugar substitute. Toss well to coat and place baking sheet on lower rack. .
Bake about 30 minutes, or until golden on the outside and tender inside. Turn potatoes once during baking.

For those of you who don't understand when to add the ingredients, re-read #4 of the instructions.

This recipe doesn't tell you when to use the ingredients that it gives you. Does anyone know when to use the list of ingredients? I know its not really a pie but am I to mix all the ingredients then sprinkle it on the potatoe?

Pay attn people. Of course all of the ingredients match up with the instructions. This is an alternative to evil Vicky's sweet potato pie not an actual pie.

there is no "pie" to assemble as with a crust, etc. if that's what you're asking. Rocco made this on the Biggest Loser. It's a healthier version of the recipe. It's basically baked sweet potatoes. Very good!!

Recipe incomplete. Doesn't use any ingredients nor does it state how to assemble the pie.
