Sugarless Cake with Pineapple
As good as a pineapple upside down cake, but better for you!
Yield: Serves 8-10
Ingredients
- 1 c. raisins
- 1/2 c. dates, chopped
- 1/2 c. crushed pineapple (packed in juice)
- 1 c. water
- 1/4 lb. margarine
- 1 1/2 c. flour
- 1 tsp. soda
- 1 tsp. vanilla
- 2 eggs
- 1/2 c. chopped nuts
Instructions
- Boil raisins, dates, pineapple and water for 3 minutes
- Add margarine and let cool
- Beat eggs and vanilla
- Add flour sifted with soda
- Add cooled fruit mixture and nuts, mixing well
- Pour into greased and floured 9 x 13 inch pan
- Bake in 350 degree oven approximately 25 minutes, or until a toothpick in center comes out clean
- Let cool completely before serving
- May frost with 8 ounce cream cheese mixed with 1/4 cup honey.

We needed a cake for a friend who doesn't use sugars or artificial sweeteners. Turns out he loves pineapple, and this was a hit. Very good for a nutritious snack anytime. I would suggest adding one or two more eggs for better loft in the cake.
