Stuffed Green Peppers
Meat and cheese overflow from these peppers.
Yield: Serves 4
Ingredients
- 2 large green peppers
- 1 lb. ground beef
- 1- 7.5 oz. canned tomatoes, diced
- 1 Tbs. Worcestershire sauce
- 1/2 tsp. dried oregano
- shredded cheddar cheese
Instructions
- Halve peppers lengthwise, removing stem ends, seeds and membranes
- Immerse in boiling water for 3 minutes
- Invert on paper towels and drain well
- In a large skillet cook meat until brown
- Drain off fat (remove and pat with paper towels)
- Return meat to skillet and stir in undrained tomatoes, Worcestershire sauce, oregano, salt and pepper to taste
- Bring to a boil
- Reduce heat and simmer for 15 minutes
- Stir in half of the cheese
- Fill peppers with meat mixture
- Place in 2 quart baking dish
- Bake at 375º F for 15 minutes
- Sprinkle with remaining cheese
- Let stand two minutes
