Strawberry Rhubarb Salad
A molded salad that is great for entertaining and suitable for Diabetics!
Yield: Serves 8-10
Ingredients
- 2 c. cooked rhubarb (sweetened to taste with sugar substitute)
- 1 pkg. sugar-free strawberry gelatin, prepared according to package directions
- 1/2 c. finely chopped nuts
- 1/2 c. finely chopped celery
- 1 (3 oz.) pkg. cream cheese, softened
Instructions
- Chill gelatin mix until it begins to thicken
- Add all other ingredients and blend well, and pour into desired mold
- Chill thoroughly until set
