Strawberry Rhubarb Salad

A molded salad that is great for entertaining and suitable for Diabetics!

Yield: Serves 8-10

Ingredients

  • 2 c. cooked rhubarb (sweetened to taste with sugar substitute)
  • 1 pkg. sugar-free strawberry gelatin, prepared according to package directions
  • 1/2 c. finely chopped nuts
  • 1/2 c. finely chopped celery
  • 1 (3 oz.) pkg. cream cheese, softened

Instructions

  1. Chill gelatin mix until it begins to thicken
  2. Add all other ingredients and blend well, and pour into desired mold
  3. Chill thoroughly until set
