Sonny and Joe's Bountiful Vegetable Wrap
A delicious way to enjoy this hummus.
Yield: Serves 1
Ingredients
- 1 Whole wheat (or other) wrap
- 2 Tbs Sonny & Joe’s Roasted Red Pepper Hummus
- 1 tsp olive oil
- ½ medium size zucchini sliced
- ¼ c sweet onion sliced
- 1/3 c or handful baby spinach
- About 5 strips cucumber (sliced lengthwise)
- Slices tomato
- Lettuce leaves
Instructions
- In small skillet heat olive oil and sauté onion and zucchini until onion is golden.
- Spread Sonny & Joe’s hummus on wrap and layer onion and zucchini atop hummus.
- Top with baby spinach, cucumber lettuce and tomato.
- Season with salt and pepper to taste.
