Simple Coconut Cream Pie

Yield: Serves 4


  • 1 cup light cream
  • 2 Tbs. lemon juice
  • 2 egg yolks
  • 1 cup cottage cheese
  • 1/4 cup Splenda
  • 1/2 tsp. coconut extract


  1. Cream ingredients together and pour into greased pie dish
  2. Bake at 300F for 20 minutes
