Sicilian Rice Skillet

3 cups cooked brown rice
1 spray olive oil cooking spray
1 onion, peeled and chopped
2-1/2 cups pasta sauce
12 ounces ground skinless turkey breast
3 cups mixed frozen veggies
Lightly spray a large, 12 inch nonstick skillet with olive oil cooking spray. Heat over medium heat.
Saute onion until brown then add pasta sauce and ground turkey. Bring to a boil. Add mixed frozen veggies.
Cover and bring to a boil and cook until turkey is done and veggies are heated through, about 5 minutes. Add rice, stir and remove from heat. Optional topping: grated Parmesan cheese
