Sausage or Bacon Breakfast Burrito
A low-carb meaty breakfast alternative.
Yield: Serves 2
Ingredients
- Sausage or bacon
- 4 whole eggs
- 1/8 cup light cream
- shredded cheese
- 1/4 cup sour cream
- 2 Tbs. salsa
Instructions
- Cook sausage or bacon
- Mix eggs with cream
- Pour half of egg mixture into skillet and tip to side to spread eggs across pan
- Cook thoroughly and turn egg carefully over
- Repeat with remaining eggs
- Divide sausage into egg "tortillas" and roll up
- Top with cheese, sour cream and salsa
