Roasted Potatoes With Garlic
A simple, flavorful side dish.

Yield: Serves 8
Ingredients
- 1 lb. tiny red potatoes, halved
- 1 head garlic, cloves separated but not peeled
- 2 tsp. chopped fresh rosemary or thyme
- 2 Tbsp. olive oil
- 1/2 tsp. salt
- 1/4 tsp. pepper
Instructions
- Preheat oven to 350 degrees. Coat a 13x9-inch baking pan with nonstick spray
- Arrange potatoes and garlic cloves in baking pan
- Drizzle with oil and sprinkle with salt and pepper (sprinkle with chopped fresh rosemary or thyme if desired)
- Bake 30 to 40 minutes, or until potatoes are tender and garlic is soft
- Squeeze the roasted garlic from the peels onto the potatoes
- Mix together

i throw a little fresh rosemary or thyme for extra flavor. they really are a great alternitive to loaded baked potatoes or french fries.
