Roasted Potatoes With Garlic

A simple, flavorful side dish.

Roasted Potatoes With Garlic Photo
Yield: Serves 8

Ingredients

  • 1 lb. tiny red potatoes, halved
  • 1 head garlic, cloves separated but not peeled
  • 2 tsp. chopped fresh rosemary or thyme
  • 2 Tbsp. olive oil
  • 1/2 tsp. salt
  • 1/4 tsp. pepper

Instructions

  1. Preheat oven to 350 degrees. Coat a 13x9-inch baking pan with nonstick spray
  2. Arrange potatoes and garlic cloves in baking pan
  3. Drizzle with oil and sprinkle with salt and pepper (sprinkle with chopped fresh rosemary or thyme if desired)
  4. Bake 30 to 40 minutes, or until potatoes are tender and garlic is soft
  5. Squeeze the roasted garlic from the peels onto the potatoes
  6. Mix together

i throw a little fresh rosemary or thyme for extra flavor. they really are a great alternitive to loaded baked potatoes or french fries.
