Roast whole heads of garlic to produce buttery, mellow cloves that spread easily on bread or add a rich flavor to pasta or bean dishes.
1 head regular or elephant garlic
1 spray olive oil cooking spray
Preheat oven to 350 degrees. Remove any loose skin from the head of garlic but make sure you leave the head intact.
Lightly spray the head of garlic or rub it with a little olive oil. Place the garlic into a small, covered baking dish. Roast the garlic for one hour.
Serve warm or refrigerate for later use.
