Roasted Asparagus and Mushrooms with Rosemary
|Vitamin A:||300iu (6%)|
|Vitamin C:||15mg (25%)|
1 pound trimmed fresh asparagus
2 cups mushrooms, rinsed, quartered
Olive oil spray
1/4 teaspoon each: crushed dried rosemary, garlic powder, black pepper
Preheat oven to 500º. Place asparagus spears and mushrooms onto baking sheet. Lightly spray with olive oil spray.
Roast until asparagus is crisp-tender or about 8 minutes. Toss with the rest of ingredients.
