Raspberry Meringues

Meringues meet raspberry in this treat.

Yield: Serves 6


  • 3 egg whites
  • 1/2 cup Splenda
  • 4 oz. cream cheese
  • 1/2 cup ricotta cheese
  • 1/2 cup raspberries


  1. Preheat oven to 275F
  2. Whisk egg whites until stiff, gradually add 1/4 cup Splenda
  3. Spoon mixture onto two greased baking sheet, spreading meringue into two 8 inch circles
  4. Bake for 1 1/2 - 2 hours or until crisp and dry
  5. Mix cream cheese with 1/4 cup Splenda and ricotta cheese and raspberries
  6. Place one meringue on decorative plate
  7. Layer with cream cheese and top with second meringue
