Tender greens are cooked with pinto beans, zucchini and a ranch-style sauce.
3 cups cooked brown rice
2-1/2 cups pinto beans, drained
1/4 cup low-sodium ketchup
1/4 cup water
2 cups shredded kale
1 cup prepared salsa
1 cup diced zucchini
1/4 teaspoon chili powder
Place beans and the rest of the ingredients, except the rice, in a large sauce pan. Bring to a boil, cover and reduce to a simmer for 5 minutes. Serve beans over top of the cooked brown rice.
