Quinoa Tabouleh
This Mediterranean-style recipe is a fresh way to enjoy quinoa.
Yield: Serves 4
Ingredients
- 1 cup quinoa - rinsed
- 2 cups water
- 1 cucumber chopped
- 2 scallions chopped
- fresh mint chopped
- 2 lemons, juiced
- 2 tbsp. extra virgin olive oil
- 1/4 tsp. sea salt
Instructions
Bring 2 cups of water to a boil, add in quinoa and sprinkle with sea salt. Cover and reduce heat to simmer for 20 minutes or until water is absorbed
Combine in a bowl olive oil, lemon juice and salt. Add in quinoa as well as remaining ingredients and refrigerate until chilled to serve.
