3/4 cup dry quinoa
2 teaspoons olive oil
1/2 bunch of green onions chopped
2 garlic cloves, minced
2 1/2 cups boiling water
1/4 teaspoon black pepper
1/4 cup chopped pecans
Place quinoa in a colander and rinse under cold running water. Drain well.
Heat oil over medium heat in a large non-stick skillet. Add green onions and garlic; saute until nutty brown, about 2 minutes. Stir in quinoa and saute briefly until lightly toasted, about 1 minute.
Add boiling water and pepper. Reduce heat to a simmer, cover and cook 20 to 25 minutes or until quinoa is tender and liquid is absorbed. Stir in pecans.
