Puffed Oven Pancake
A new low-carb way to prepare your pancakes
Yield: Serves 6
Ingredients
- 3 eggs
- 1/2 cup high gluten flour
- 1/4 tsp. salt
- 2 Tbs. butter
- 1/4 cup cream
- 1/4 cup water
Instructions
- Beat eggs
- Add flour, cream, water and 1/4 tsp. salt
- Mix well
- Melt butter in skillet
- Pour egg mixture into hot skillet
- Bake at 400º F for 25 minutes until puffed and golden brown
- Serve with blackberry syrup, maple butter or low carb maple syrup

I've made puffed pancakes before and tried this one since I'm now on a low-carb diet. This didn't turn out at all like I expected. It was tough and not very good. I think I'll try to alter my original recipe and see if I can come up with something that is similar to that.
