Zucchini Boats

  1. Preheat oven to 375 degrees F
  2. Slice zucchini in half and scoop out middle, leaving 8 "boats"
  3. Steam boats for 5 minutes
  4. Meanwhile, chop up leftover zucchini and saute in a large skillet with onion and bell pepper until soft
  5. Combine zucchini/onion/bell pepper mixture with eggs and cream
  6. Place zucchini/egg mix in boats
  7. Sprinkle with cheese
  8. Bake in oven until heated throughout and cheese is melted
