White Bean Bruschetta

Yield: Serves 4.



1-1/4 cup boiled white beans, rinsed and drained (you can use canned)
1 tablespoon olive oil
2 tablespoon balsamic vinegar
1 teaspoon Italian seasoning
1 garlic clove, minced
black pepper to taste
4 1-inch thick slices Italian bread, grilled

Combine all ingredients (except bread); season with pepper to taste. Spoon some of the mixture onto the bread, drizzle with high-quality extra-virgin olive oil and serve immediately.
