Potatoes contain vitamin C, an important antioxidant.
1 Tbsp olive oil
1 large green bell pepper, seeded and diced
1 medium onion, chopped
2 lb red potatoes, wash and cut into chunks
1 tsp garlic powder
1 tsp Italian seasoning mix
1-1/4 cups water
2 Tbsp red wine vinegar
1 tsp prepared dark mustard
Heat a large nonstick skillet over medium-high heat. Add the olive oil and sauté the pepper and onion 3-5 minutes. Add potatoes, seasonings and water. Bring to a boil, reduce heat to low and simmer covered, stirring occasionally, for about 15 minutes or until potatoes are tender. Stir in vinegar and mustard. Serve warm.
