Spinach contains lutein which may help prevent age-related blindness.
1/4 cup chopped walnut halves or pieces
6 cups ready-to-serve spinach leaves
1 Tbsp olive oil
1 Tbsp flavored vinegar
1 Tbsp lemon juice
1/8 cup sliced red onion
2 Tbsp crumbled feta cheese
freshly ground pepper to taste
Combine all ingredients together in a medium-sized mixing bowl. Serve immediately or chill up to 2 hours until ready to serve.
