Full of flavor from salsa, beans and veggies and sour cream, these burros make a quick, hot meal.
1 red onion, sliced
1 green bell pepper, sliced
1 cup prepared salsa
1/2 head cabbage (4 cups), sliced
2 cups drained black beans
4 lowfat or light flour tortillas
4 tablespoons nonfat sourcream
Spray a large nonstick skillet and heat over medium high. Saute red onion and green bell pepper until tender.
Add salsa and cabbage and cook until cabbage is tender.
Add black beans and heat thoroughly. Divide filling among tortillas and roll up, serving nonfat sour cream on top.
