Vegetarian Sloppy Joes

4 whole wheat rolls, sliced in half & toasted
1/2 cup each, sliced: zucchini, green onion, mushrooms, kidney beans
15-ounce can stewed diced tomatoes, drained (1-1/4 cups)
1/2 cup barbecue sauce
1/2 teaspoon chili powder

Heat a large nonstick skill over medium-high heat. Add vegetables, beans, tomatoes, barbecue sauce and chili powder and bring mixture to a boil, stirring well.

Reduce heat to a simmer and cook until vegetables are tender, about 4-5 minutes.

Serve vegetarian sloppy joe over toasted bun halves in open face style. This dish goes well with a tossed salad or lowfat slaw. You can also cook everything together in the microwave.
