Vegetable Beef Soup
A classic favorite soup recipe.

Yield: Serves 4
Ingredients
- 3 lbs. beef, cut into bit sized pieces
- 1 garlic clove diced
- 1/2 celery rib, diced
- 3 Tbs. olive oil
- 3 cups beef broth
- 1 cup water
- 1/4 cup red wine
- 1- 14 oz. can diced tomatoes, with juice
- salt and pepper to taste
- 1 cup cauliflower
- 1/2 cup shredded zucchini
Instructions
- Heat oil in a large pot
- Add beef, garlic and celery
- Cook until meat is browned on all sides and onions are translucent
- Add the broth, water, tomato, wine and spices
- Bring to a boil, then cover and reduce to low heat
- Let simmer gently for 1 hour, stirring occasionally
- Add cauliflower and zucchini
- Bring back to a boil, cover, turn down the heat, and cook until heated through
