Turkey Tacos

Yield: 6 servings. 2 tacos each.



Vegetable oil cooking spray
1/2 cup chopped onion
2 cups extra-lean ground turkey breast
1/2 cup water
1 cup tomato sauce with no added salt
1 teaspoon chili powder
1 teaspoon cumin
1/2 teaspoon dried oregano
12 corn tortillas, warmed
1 cup shredded romaine lettuce
1 cup diced tomato
1/2 cup diced green onion

Lightly spray a large nonstick skillet with cooking oil and heat over medium-high heat. Saute the onion until golden. Add the ground turkey and cook briefly. Add the water, tomato sauce and spices and bring to a boil.

Lower heat to simmer and cook until the turkey is done, about 8 minutes.

Serve the turkey taco filling with warmed tortillas, lettuce, tomato and green onion.
