Turkey Loaf & Mushroom Sauce

Turkey Loaf & Mushroom Sauce Photo Yield: Serves 8. Each serving (1/8th loaf).



1/2 cup plain bread crumbs
1/4 cup skim milk
1/4 cup fat free egg substitute
1-1/2 pounds ground turkey breast
3/4 cup prepared mild salsa
1/2 teaspoon each: oregano, sage, garlic powder, black pepper

In a large bowl, combine the bread crumbs, skim milk and egg substitute. Add the turkey, salsa and seasonings. Mix well and transfer the mixture to a loaf pan. Smooth the top.

Preheat oven to 350º Bake loaf until it is firm and 165 degrees F in the center, about 45-50 minutes. Allow to sit for 5 or 10 minutes before cutting and serving.

Mushroom Sauce:
1 cup lowfat ready-to-serve cream of mushroom soup
1 cup sliced mushrooms

To make the mushroom sauce, combine the soup with the mushrooms and microwave on high for 6-8 minutes or until the mushrooms are tender.
