Tuna Tomato Sandwich

Yield: Serves 2. Each serving: 1 open-faced sandwich

6-ounce can light tuna packed in water, drained
1 tomato, cored and diced small
2 tablespoons fat-free mayonnaise
2 cups shredded romaine lettuce
2 slices 100% whole wheat bread, toasted

Mix tuna, tomato and mayonnaise in a small mixing bowl. Make two open-faced sandwiches: top each slice of bread with lettuce and tuna salad. Serve on small plate.
