Tuna Casserole

Yield: Serves 4. 1 cups per serving.



2-1/2 cups water
2 cups dry macaroni
1 6 ounce can tuna in water (low sodium), drained
1 14 ounce can diced Italian-flavored tomatoes
1 cup light shredded cheddar cheese

Bring water to a boil in a 2 quart microwave container. Add macaroni and cook on full power until done, about 8-10 minutes.

Drain and rinse macaroni and place back in 2 quart container. Stir in tuna, tomatoes and cheddar. Microwave until heated through, about 5 minutes.
