Tropical Rice Salad

Yield: Serves 4. 1-1/2 cups per serving.



3 cups cooked brown rice
15-ounce can black beans, drained
1 orange, peel, remove seeds and dice
1 mango, peel, remove pit and chop
1 fresh tomato, core and dice
1/2 jalapeno pepper, remove seeds and mince
1/2 cup chopped red bell pepper
1/4 cup sliced green onion
6 cups ready-to-serve romaine lettuce
2 tablespoons cider vinegar
2 tablespoons orange juice
4 tablespoons nonfat Italian salad dressing

Combine all ingredients in large mixing bowl. Serve at once.
