Yield: Serves 4.
6 cups ready-to-serve romaine
10 fresh cherry tomatoes, halved
2/3 cup chopped carrots
1 teaspoon olive oil
2 tablespoon cider vinegar
black pepper to taste
Place all ingredients for salad n a large bowl and chill until ready to serve, up to 24 hours. When ready to serve, toss salad together with oil, vinegar and pepper. Serve immediately.
